  • 2.5 pounds beef shoulder (thinly sliced)
  • 3/4 cup pineapple juice
  • 1 cup fresh pineapple chunks
  • 3 tablespoons achiote paste
  • 3 cloves garlic (roughly chopped)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Juice of 1 orange (about 3 tablespoons)
  • 2 tablespoons white vinegar
  • Garnishes: chopped cilantro, diced white onion, lime wedges, extra pineapple slices

Instructions

  1. In a blender, combine pineapple juice, pineapple chunks, achiote paste, garlic, ground cumin, oregano, orange juice, white vinegar, sea salt, and black pepper. Blend until smooth.
  2. Place sliced beef in a zip-top bag or glass dish and pour the marinade over it. Massage the marinade into the meat and refrigerate for at least 1 hour (preferably 4–6 hours).
  3. Preheat your grill to medium-high heat or heat a skillet over medium-high heat.
  4. Grill reserved pineapple slices until charred; chop into pieces once done.
  5. Grill marinated beef slices until crisp on the edges and cooked through; let rest before chopping into strips.
  6. Warm tortillas on the grill or skillet.
  7. Assemble tacos by layering beef onto tortillas with grilled pineapple, diced onion, chopped cilantro, and lime wedges.
