Ingredients

Scale
  • 1 1/2 pounds thin-sliced boneless skinless chicken breasts
  • 1/2 cup ketchup
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup light brown sugar
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground ginger
  • 1 fresh pineapple, sliced into spears

Instructions

  1. In a large zip-top plastic bag, combine chicken breasts with ketchup, soy sauce, brown sugar, olive oil, lemon juice, ground ginger, salt, and pepper. Seal and massage the bag to coat chicken evenly. Marinate in the refrigerator for at least 30 minutes or overnight.
  2. Preheat your grill to medium-high heat and lightly oil the grates.
  3. Remove chicken from marinade (discard leftover marinade) and grill for about 5 minutes on one side with the lid closed.
  4. Flip the chicken and grill for another 4-5 minutes until fully cooked through (internal temperature should reach 165°F).
  5. Add pineapple spears to the grill; cook them for about 8-10 minutes total, turning every few minutes until caramelized.
  6. Serve immediately and enjoy!
