- 1 (16 oz.) package your fave short-cut pasta
- 1 Tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 medium bell peppers, chopped
- 2–3 fresh thyme sprigs
- 2 Tbsps organic all-purpose flour
- 1 tsp smoked paprika
- sea salt, to taste
- 1 scotch bonnet pepper, minced or whole with a slit (optional)
- 1 1/2 cups organic heavy cream (or coconut cream for a vegan option)
- 2 cups organic chicken stock/broth (or veggie stock for a vegan option)
- 2 Tbsps apple cider vinegar (or additional veggie stock for a vegan option)
- 1 cup freshly-grated parmesan cheese (or vegan cheese for a vegan option)
Instructions
- Marinate the chicken with jerk seasoning in a mixing bowl.
- Boil the pasta according to package instructions until al dente.
- In a skillet, heat olive oil and sauté garlic until fragrant. Add bell peppers and thyme; cook until softened.
- Stir in marinated chicken and cook until fully cooked through.
- Sprinkle flour over the mixture, then gradually add chicken stock and heavy cream while stirring. Season with smoked paprika and salt.
