  • ½ cup light brown sugar (85g – loosely packed)
  • 1 tbsp ground cinnamon (12g)
  • 3 tbsp softened vegan butter (45g)
  • ¼ cup melted Biscoff Cookie Butter
  • 56 crushed Biscoff cookies
  • 1 tsp vanilla extract (3g – optional)
  • 2 tbsp vegan cream cheese (softened slightly)
  • 1 cup powdered sugar (130g)
  • 2 tbsp melted Biscoff cookie butter
  • 12 tsp dairy-free milk (as needed)

Instructions

  1. Prepare the dough by combining warmed dairy-free milk and ¼ cup brown sugar; add active dry yeast and let it sit until foamy.
  2. In a separate bowl, mix flour, cinnamon, and salt; gradually incorporate into wet ingredients along with melted vegan butter.
  3. Knead the dough until smooth, then let it rise in a greased bowl for about 1 hour.
  4. Make the filling by mixing brown sugar, cinnamon, softened vegan butter, melted cookie butter, and crushed cookies.
  5. Roll out the dough and spread the filling evenly before rolling it tightly into a log shape and slicing into pieces.
