- 1 ½ to 2 pounds boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
- 4 to 5 ears corn on the cob (kernels cut off)
- ½ red onion, diced
- 3 to 4 jalapenos, sliced (seeds removed for less heat)
- 4 to 5 cloves garlic, minced
- Cooking oil of choice
- Kosher salt and pepper
- Fajita or taco seasoning (to taste)
- 1 cup chopped cilantro
- 2 to 3 tablespoons lime juice
Instructions
- Prepare all ingredients by cutting the chicken into bite-sized pieces, dicing the onion, slicing the jalapenos, and mincing the garlic. Remove kernels from corn on the cob.
