Ingredients

Scale
  • 2 and 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon lemon zest
  • 3/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 and 1/4 teaspoons instant yeast
  • 1 large egg
  • 1 and 1/4 cups fresh blueberries
  • 6 tablespoons granulated sugar (for filling)
  • 4 ounces cream cheese (for icing)
  • 3/4 cup confectioners' sugar
  • 2 tablespoons lemon juice (for icing)

Instructions

  1. In a large bowl, whisk together flour, sugar, salt, and lemon zest. In a separate heatproof bowl, warm milk and butter until melted. Stir in yeast.
  2. Combine the wet mixture with dry ingredients and add the egg. Mix until a soft dough forms.
  3. Knead the dough on a floured surface until smooth (3–5 minutes). Let rise in a greased bowl for about 1.5 hours or until doubled.
  4. For the filling: Cook blueberries with sugar and lemon juice in a saucepan over medium heat until slightly reduced; let cool.
  5. Roll out the dough into a rectangle, spread cooled blueberry filling, roll tightly, cut into pieces, and place in a greased baking pan.
  6. Let rolls rise again for about an hour. Preheat oven to 375°F and bake for 24–25 minutes until golden brown.
  7. Prepare icing by mixing softened cream cheese with butter, confectioners' sugar, and lemon juice until smooth.
  8. Spread icing over warm rolls before serving.
