  • 5 medium sweet potatoes
  • 2 heads broccoli
  • 1 cup buffalo sauce
  • 1/2 cup avocado oil or olive oil
  • 1 cup shredded cheddar cheese
  • Green onions for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a 9×13 casserole dish.
  2. Cut the chicken, sweet potatoes, and broccoli into uniform pieces.
  3. Mix buffalo sauce, oil, salt, pepper, and garlic powder in a small bowl.
  4. Toss sweet potatoes with half of the buffalo sauce mixture and spread them in the casserole dish. Roast for 30 minutes.
  5. Combine chicken and broccoli with the remaining buffalo sauce mixture.
  6. Layer the chicken and broccoli over the roasted sweet potatoes and bake for another 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
