- ½ cup dry white grape juice
- 6 tablespoons unsalted butter
- 2 cups heavy whipping cream (or half and half)
- 1 cup parmesan cheese (freshly grated)
- 2–3 teaspoons cajun seasoning
- 2 tablespoons fresh parsley (finely chopped)
- ½ pound pasta (like fettuccine, linguine, or penne)
Instructions
- Boil salted water in a large pot and cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, finely dice shallot and mince garlic. Chop parsley and grate parmesan cheese.
- In a sauté pan over medium-low heat, melt 2 tablespoons of butter. Add shallots and sauté until translucent (about 3 minutes). Stir in minced garlic for another 30 seconds.
- Deglaze the pan with dry white grape juice, simmering until most liquid evaporates.
- Add remaining butter, then whisk in heavy cream, parmesan cheese, and Cajun seasoning to taste.
- Simmer the sauce until thickened to your liking; stir in chopped parsley before removing from heat.
- Toss cooked pasta with the sauce in the sauté pan, adding reserved pasta water as needed for desired consistency.
- Serve warm topped with extra parmesan cheese and parsley.
