  • 3 large garlic cloves
  • 4 to 5 San Marzano peeled tomatoes
  • 2 handfuls fresh baby spinach
  • 2 (15 oz) cans Cannellini white beans
  • 1/4 to 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher salt and black pepper
  • 2 cups shredded mozzarella

Instructions

  1. Preheat your oven to 475°F.
  2. In a 10-inch ovenproof skillet, heat olive oil over medium-high heat. Add sliced garlic and sauté until golden (about 1 minute).
  3. Add San Marzano tomatoes; mash gently and cook for another minute before reducing the heat.
  4. Stir in baby spinach and rinsed Cannellini beans, seasoning with Italian seasoning, crushed red pepper flakes, salt, and black pepper.
  5. Top with shredded mozzarella cheese evenly.
  6. Bake for 8 to 10 minutes until cheese is melted and bubbly; broil for an additional minute if desired.
