  • 2 jars maraschino cherries (drained, minced, and squeezed dry)
  • 1 cup softened butter
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 tsp almond extract
  • 2 tsp cherry extract
  • 4 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 4 tbsp melted butter
  • 1/3 cup + 12 tbsp maraschino cherry juice
  • 45 cups powdered sugar for icing
  • ½ cup slivered almonds for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in almond and cherry extracts.
  4. In another bowl, whisk together flour, baking soda, and cream of tartar; gradually mix into the wet ingredients until combined.
  5. Gently fold in minced cherries.
  6. Drop rounded tablespoons of dough onto lined baking sheets about 2 inches apart.
  7. Bake for 10-12 minutes until lightly golden around the edges but soft in the center.
  8. While cookies cool, mix melted butter with reserved cherry juice until smooth. Gradually add powdered sugar until desired consistency is reached. Stir in almond and cherry extracts.
  9. Once cooled, drizzle or spread icing over each cookie and sprinkle slivered almonds on top as garnish.
