  • 1 1/2 pounds chicken thighs
  • 1/4 cup coconut aminos
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons cumin
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup white rice
  • 1 13.5-ounce can full-fat coconut milk
  • pinch of salt
  • 2 cups mango cucumber salsa
  • 4 packed cups chopped romaine
  • 1 small avocado, diced
  • lime juice, fresh cilantro for serving

Instructions

  1. Prepare the marinade by mixing coconut aminos, lime juice, garlic, chili powder, smoked paprika, cumin, red pepper flakes, salt, and pepper in a jar.
  2. Marinate the chicken in the mixture for at least 30 minutes or up to 24 hours.
  3. While marinating, prepare mango cucumber salsa and chill.
  4. Rinse the rice until water runs clear. Cook rice using an Instant Pot or stovetop method with coconut milk and salt.
  5. Grill marinated chicken over medium-high heat until cooked through.
  6. Assemble bowls by layering rice, grilled chicken, salsa, diced avocado, lime juice, and fresh cilantro.
