  • 16 ounces frozen broccoli florets (thawed)
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 cup plain breadcrumbs
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper (divided)
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 inch baking dish.
  2. In a large skillet over medium-high heat, heat olive oil. Cook the chicken cubes seasoned with salt and pepper until golden brown (about 8-10 minutes). Set aside.
  3. Thaw the broccoli and drain well to remove excess moisture.
  4. In a mixing bowl, combine cream of chicken soup, mayonnaise, sour cream, cheddar cheese, milk, lemon juice, garlic powder, onion powder, and remaining pepper.
  5. Fold in the cooked chicken and broccoli into the sauce mixture.
  6. Spread evenly in the prepared baking dish.
  7. Mix breadcrumbs with melted butter and sprinkle on top of the casserole.
  8. Bake for about 30 minutes until golden brown and bubbly.
