  • 2 small boneless skinless chicken breasts (just over 1 lb.)
  • Salt/Pepper
  • 2 tablespoons peanut oil (Plus more as needed. Can sub olive oil.)
  • ¼ cup dry white grape juice
  • 2 ½ cups mixed stir fry vegetables (like bell peppers, carrots, broccoli)
  • 10 oz. lo mein noodles
  • 1 cup chicken broth
  • ¾ cup beef broth
  • ¼ cup soy sauce
  • 1 tablespoon brown sugar (can sub honey)
  • 2 tablespoons cornstarch
  • 3 cloves garlic (minced)
  • 1 teaspoon hot sauce
  • ¼ teaspoon toasted sesame oil
  • ¼ teaspoon ground ginger
  • 1 pinch red pepper flakes (optional)

Instructions

  1. Season chicken breasts with salt and pepper. Heat peanut oil in a wok or large skillet over medium-high heat. Cook chicken until golden brown on both sides, about 5-7 minutes per side. Remove and slice thinly.
  2. Boil water in a separate pot and cook lo mein noodles according to package instructions until al dente; drain.
  3. In the same wok, add more peanut oil if necessary and stir-fry mixed vegetables with minced garlic for 3-4 minutes until crisp-tender.
  4. Return sliced chicken and cooked noodles to the wok. In a bowl, mix grape juice, chicken broth, soy sauce, brown sugar, cornstarch, hot sauce, toasted sesame oil, ground ginger, and red pepper flakes. Pour this mixture into the wok and toss until combined and heated through.
