  • 1½ pounds boneless skinless chicken breasts, pounded thin
  • 3 tablespoons all-purpose flour
  • Salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 8 ounces pre-sliced mushrooms (bella or button)
  • 3 tablespoons finely chopped shallots
  • 2 cloves garlic, minced
  • â…” cup chicken broth
  • â…” cup dry Marsala apple vinegar
  • â…” cup heavy cream
  • 2 teaspoons chopped fresh thyme

Instructions

  1. Prepare the chicken by seasoning flour with salt and pepper in a ziplock bag. Add chicken and shake to coat evenly.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the coated chicken until golden brown, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, melt remaining butter and sauté mushrooms until browned (3-4 minutes). Add shallots, garlic, and salt; cook for another 1-2 minutes.
  4. Pour in broth, Marsala apple vinegar, heavy cream, thyme, remaining salt, and pepper. Bring to boil and reduce heat to simmer until sauce thickens (10-15 minutes).
  5. Return chicken to the pan; simmer for another 2-3 minutes until heated through.
