  • 16 ounces spaghetti
  • 4 raw chicken breasts (cut into 1-inch pieces)
  • 1 1/2 cups yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 1 can (10 ounces) Rotel (drained)
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups pepper jack cheese (grated)

Instructions

  1. Preheat oven to 350ºF (177ºC) and prepare a 9×13 inch baking dish with nonstick spray.
  2. Cook spaghetti in salted water until al dente; drain and return to pot.
  3. Season chicken with salt and pepper; brown in a skillet with vegetable oil over medium heat. Set aside.
  4. Sauté onions and garlic in the same skillet until tender; add spices and cook until aromatic.
  5. Mix drained Rotel, cream of chicken soup, sour cream, and milk in a bowl until well combined.
  6. Combine the cooked spaghetti, chicken, sautéed onions, and sauce mixture; mix well.
  7. Pour into the baking dish, top with cheese, and bake for about 30 minutes or until bubbly.
