- 16 oz package cornbread mix
- 3/4 cup milk
- 1 large egg
- 7 oz can diced green chiles (drained)
- 10 oz can green enchilada sauce
- 14.5 oz can creamed corn (undrained)
- 3 cups chopped rotisserie chicken
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 2 tbsp taco seasoning (divided)
Instructions
- Preheat oven to 400°F (200°C).
- Lightly spray a 9×13 inch baking dish with non-stick cooking spray.
- In a mixing bowl, combine cornbread mix, milk, egg, drained green chiles, half of the taco seasoning, and creamed corn until just mixed.
- Pour the mixture into the prepared baking dish and bake for 20–25 minutes until golden brown.
- Mix chopped rotisserie chicken with remaining taco seasoning in another bowl.
- Once the cornbread base is baked, use a wooden skewer to poke holes across the surface.
- Pour green enchilada sauce over the base, then layer with seasoned chicken and top with cheeses.
- Return to oven and bake for an additional 15 minutes until cheese is melted and bubbly.
- Let rest for at least 5 minutes before slicing into squares and serving.
