  • 16 oz package cornbread mix
  • 3/4 cup milk
  • 1 large egg
  • 7 oz can diced green chiles (drained)
  • 10 oz can green enchilada sauce
  • 14.5 oz can creamed corn (undrained)
  • 3 cups chopped rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tbsp taco seasoning (divided)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly spray a 9×13 inch baking dish with non-stick cooking spray.
  3. In a mixing bowl, combine cornbread mix, milk, egg, drained green chiles, half of the taco seasoning, and creamed corn until just mixed.
  4. Pour the mixture into the prepared baking dish and bake for 20–25 minutes until golden brown.
  5. Mix chopped rotisserie chicken with remaining taco seasoning in another bowl.
  6. Once the cornbread base is baked, use a wooden skewer to poke holes across the surface.
  7. Pour green enchilada sauce over the base, then layer with seasoned chicken and top with cheeses.
  8. Return to oven and bake for an additional 15 minutes until cheese is melted and bubbly.
  9. Let rest for at least 5 minutes before slicing into squares and serving.
