  • 2 tablespoons olive oil
  • 1/2 cup black beans (canned, rinsed, and drained)
  • 1/2 cup corn (can use thawed frozen corn, canned, or fresh)
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 jalapeno pepper (diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 1/3 cup frozen spinach (thawed and chopped)
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon cayenne pepper
  • 1 cup Monterey Jack cheese (shredded)
  • 1012 egg roll wrappers
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, green onions, jalapeno pepper, cilantro, spinach, cumin, chili powder, salt, cayenne pepper, and Monterey Jack cheese. Mix well.
  2. Lay an egg roll wrapper on a flat surface. Place 2-3 tablespoons of filling in the center. Fold the bottom corner over the filling and tuck in the sides before rolling tightly. Seal edges with water.
  3. Heat oil in a deep fryer or skillet over medium heat. Fry eggrolls until golden brown (3-5 minutes per batch). Drain on paper towels.
  4. Serve hot with your choice of dipping sauce.
