  • 2 cups Oreo crumbs
  • 4 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (room temperature)
  • 1 cup white granulated sugar
  • ½ cup unsweetened cocoa powder
  • 8 oz semi-sweet chocolate (melted)
  • ½ cup heavy cream (room temperature)
  • 4 large eggs (room temperature)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a bowl, combine Oreo crumbs and melted butter. Press firmly into the bottom of the prepared pan.
  3. Beat cream cheese until smooth. Gradually add sugar, cocoa powder, melted chocolate, heavy cream, and vanilla extract; mix until combined. Add eggs one at a time.
  4. Pour the cheesecake filling over the crust and bake for about 45 minutes until edges are set but center is slightly jiggly.
  5. Cool completely at room temperature, then prepare the ganache by melting chocolate chips with heavy cream on low heat. Pour over cooled cheesecake.
  6. Refrigerate for at least four hours before serving.
