Ingredients
- 2 cups Oreo crumbs
- 4 tablespoons unsalted butter (melted)
- 24 oz cream cheese (room temperature)
- 1 cup white granulated sugar
- ½ cup unsweetened cocoa powder
- 8 oz semi-sweet chocolate (melted)
- ½ cup heavy cream (room temperature)
- 4 large eggs (room temperature)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a bowl, combine Oreo crumbs and melted butter. Press firmly into the bottom of the prepared pan.
- Beat cream cheese until smooth. Gradually add sugar, cocoa powder, melted chocolate, heavy cream, and vanilla extract; mix until combined. Add eggs one at a time.
- Pour the cheesecake filling over the crust and bake for about 45 minutes until edges are set but center is slightly jiggly.
- Cool completely at room temperature, then prepare the ganache by melting chocolate chips with heavy cream on low heat. Pour over cooled cheesecake.
- Refrigerate for at least four hours before serving.
