  • 15.25 ounce package Mint Oreo cookies (divided)
  • 5 tablespoons unsalted butter
  • 8 ounces cream cheese (room temperature)
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon peppermint extract
  • 710 drops green food coloring (or until desired hue is reached)
  • 1 cup Cool Whip or Stabilized Whipped Cream
  • 3.9 ounce box instant chocolate fudge pudding
  • 1 1/2 cups milk
  • 4.6 ounces Andes Mint candies (chopped, divided; about 26 candies)
  • 8 ounce container Cool Whip or 1 recipe of Stabilized Whipped Cream (divided)

Instructions

  1. Prepare an 8 X 8-inch baking pan by lining it with parchment paper.
  2. Crush the Mint Oreo cookies and mix with melted butter; press into the bottom of the pan.
  3. Beat cream cheese with confectioners' sugar, then add peppermint extract and food coloring. Fold in Cool Whip and spread over the crust.
  4. Mix chocolate pudding mix with milk until thickened, then pour over the cheesecake layer.
  5. Top with chopped Andes Mints and another layer of Cool Whip if desired.
  6. Chill for at least three hours before slicing into squares.
