  • 2/3 cup Dutch-process cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon fine sea salt
  • 1 stick unsalted butter, at room temperature
  • 1 cup lightly packed dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups buttermilk, at room temperature
  • 3 cups powdered sugar, sifted
  • 2 sticks unsalted butter, at room temperature
  • 1/4 teaspoon fine sea salt
  • 1/4 to 1/2 teaspoon peppermint extract (depending on desired intensity)
  • 1 to 2 tablespoons heavy cream
  • Green gel food coloring (if desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and dark brown sugar until creamy. Mix in the egg and vanilla.
  3. Gradually add dry ingredients alternating with buttermilk until smooth.
  4. Use a cookie scoop to drop batter onto prepared sheets, leaving space between each dollop. Bake for about 10 minutes until set, then cool completely on wire racks.
  5. For the filling, beat together softened butter and powdered sugar until fluffy. Add salt, peppermint extract, and heavy cream until well combined.
  6. Spread or pipe filling onto half of the cooled cakes and top with remaining halves.
