- 1 cup lightly packed dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1 1/4 cups buttermilk, at room temperature
- 3 cups powdered sugar, sifted
- 2 sticks unsalted butter, at room temperature
- 1/4 teaspoon fine sea salt
- 1/4 to 1/2 teaspoon peppermint extract (depending on desired intensity)
- 1 to 2 tablespoons heavy cream
- Green gel food coloring (if desired)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and dark brown sugar until creamy. Mix in the egg and vanilla.
- Gradually add dry ingredients alternating with buttermilk until smooth.
- Use a cookie scoop to drop batter onto prepared sheets, leaving space between each dollop. Bake for about 10 minutes until set, then cool completely on wire racks.
- For the filling, beat together softened butter and powdered sugar until fluffy. Add salt, peppermint extract, and heavy cream until well combined.
