  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk or buttermilk
  • 1/3 cup vegetable oil or melted butter
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 6 tablespoons melted butter (for topping)

Instructions

  1. Preheat oven to 350°F and lightly grease a muffin tin.
  2. In a medium bowl, whisk together the dry ingredients: flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the wet ingredients: egg, vanilla extract, milk or buttermilk, and vegetable oil.
  4. Combine wet and dry ingredients using a spatula until just mixed.
  5. Fill each muffin cup two-thirds full and bake for 15–18 minutes until tops spring back when touched.
  6. Cool slightly before transferring to a wire rack.
  7. In a small bowl, whisk together the topping sugar and cinnamon.
  8. Dip the top of each muffin in melted butter, then roll in the cinnamon-sugar mixture until evenly coated.
