  • 2 lbs boneless skinless chicken thighs
  • 2 Tbsp avocado oil (plus more for cooking)
  • ⅓ cup red onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 chipotle chilies in adobo sauce (+ 1 Tbsp adobo sauce)
  • 2 Tbsp fresh lime juice
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • ½ tsp sea salt
  • ½ tsp black pepper

Instructions

  1. In a food processor or blender, combine marinade ingredients (avocado oil, red onion, garlic, chipotle chilies and adobo sauce, lime juice, paprika, cumin, oregano, salt, and pepper). Blend until smooth.
  2. Place chicken thighs in a large ziplock bag or bowl; pour marinade over the chicken. Seal or cover and refrigerate for at least 20 minutes (ideally overnight).
  3. Heat a large skillet over medium-high heat with avocado oil until hot. Add marinated chicken thighs and cook for about 6-8 minutes on each side until golden brown and fully cooked.
  4. Check internal temperature with a meat thermometer; chicken should reach at least 165°F.
  5. Remove from heat and let rest for about 10 minutes before slicing or chopping.
