- 2 lbs boneless skinless chicken thighs
- 2 Tbsp avocado oil (plus more for cooking)
- ⅓ cup red onion (finely chopped)
- 3 cloves garlic (minced)
- 2 chipotle chilies in adobo sauce (+ 1 Tbsp adobo sauce)
- 2 Tbsp fresh lime juice
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground oregano
- ½ tsp sea salt
- ½ tsp black pepper
Instructions
- In a food processor or blender, combine marinade ingredients (avocado oil, red onion, garlic, chipotle chilies and adobo sauce, lime juice, paprika, cumin, oregano, salt, and pepper). Blend until smooth.
- Place chicken thighs in a large ziplock bag or bowl; pour marinade over the chicken. Seal or cover and refrigerate for at least 20 minutes (ideally overnight).
- Heat a large skillet over medium-high heat with avocado oil until hot. Add marinated chicken thighs and cook for about 6-8 minutes on each side until golden brown and fully cooked.
- Check internal temperature with a meat thermometer; chicken should reach at least 165°F.
- Remove from heat and let rest for about 10 minutes before slicing or chopping.
