- 1/4 tsp. cumin
- 1/4 tsp. cayenne
- 1/2 cup butter
- 3/4 cup flour
- 2 cups whipped cottage cheese
Instructions
- In a crockpot, combine uncooked wild rice, chicken breasts, chopped vegetables, chicken broth, salt, pepper, poultry seasoning, cumin, and cayenne. Stir gently.
- Cover and cook on high for 4-6 hours until the chicken is cooked through and the rice is tender.
- Remove the chicken, shred it into bite-sized pieces, and return it to the crockpot.
- In a saucepan over medium heat, melt butter and whisk in flour for one minute. Gradually add whipped cottage cheese until smooth.
