  • 6 chicken thighs, skinless and boneless
  • 1 teaspoon salt (for seasoning)
  • 1 teaspoon paprika (for seasoning)
  • 1 teaspoon garlic powder (for seasoning)
  • ½ teaspoon black pepper (for seasoning)
  • 1 tablespoon olive oil
  • 1 large shallot, finely diced
  • 1 cup sliced bell peppers, mix of red, yellow, and orange
  • 4 cloves garlic, sliced
  • 4 tablespoons cowboy butter
  • ½ cup heavy cream
  • 4 tablespoons Parmesan, freshly grated
  • 2 tablespoons parsley, finely chopped

Instructions

  1. Make the Cowboy Butter: Combine softened butter, Dijon mustard, minced garlic, herbs, paprika, salt, red pepper flakes, lemon juice, and zest in a bowl and mix well.
  2. Cook the Pasta: Boil salted water in a large pot and cook the linguine according to package instructions until al dente. Reserve some pasta water before draining.
  3. Prepare the Chicken: Cut chicken thighs into strips and season with paprika, garlic powder, salt, and pepper.
  4. Sear the Chicken: Heat olive oil in a skillet over medium-high heat and sear chicken for about 4 minutes until lightly browned.
  5. Sauté Vegetables: Add shallots and bell peppers to the skillet; cook until softened.
