  • 2 cups reduced-sodium chicken broth
  • 1 cup 2% milk
  • 1 teaspoon poultry seasoning
  • 1/2 cup flour
  • 2 cups water, divided
  • 1 cup uncooked quinoa, rinsed
  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons seasoning blend of choice
  • 3 cups fresh broccoli florets
  • 1/4 cup shredded Gruyere cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13 baking dish.
  2. In a saucepan, bring chicken broth and 1/2 cup milk to a low boil. In another bowl, whisk the remaining milk with poultry seasoning and flour, then gradually add to the boiling mixture until smooth.
  3. Combine the creamy sauce with one cup of water and rinsed quinoa in a large bowl. Pour into the prepared baking dish.
  4. Slice chicken breasts into thin strips and arrange over the quinoa mixture. Sprinkle with your chosen seasoning.
  5. Bake uncovered for about 30 minutes.
  6. Blanch broccoli in boiling water for one minute, then drain. After baking, stir broccoli into the casserole along with additional water if needed for creaminess. Top with cheese and bake for an additional 5 minutes until melted.
