  • 1 pound shrimp, peeled and deveined
  • ½ cup mayonnaise
  • â…“ cup sour cream
  • 1 lemon, juiced and zested
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1 English cucumber, diced
  • 1 celery stalk, diced
  • 3 green onion stalks, sliced

Instructions

  1. Boil water in a large pot and cook the shrimp for 2-3 minutes until opaque. Drain and cool by placing in an ice bath.
  2. In a mixing bowl, combine mayonnaise, sour cream, lemon juice and zest, dill, Dijon mustard, garlic, and salt. Whisk until smooth.
  3. Add the cooled shrimp along with cucumbers, celery, and green onions to the dressing. Gently toss to coat.
  4. Cover and refrigerate for at least 30 minutes before serving.
