- 4 medium chicken breasts (boneless, skinless)
- 1 tablespoon Italian seasoning
- 1/2 tsp EACH crushed red pepper, salt, pepper
- 1 tablespoon olive oil
- 1 pound asparagus (trimmed and cut in 3rds)
- 1/2 cup onion (minced)
- 3–4 cloves garlic (minced)
- 2 tablespoons butter (divided)
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 1/4 cup Parmesan cheese (optional)
Instructions
- Season the chicken breasts with Italian seasoning, crushed red pepper, salt, and pepper.
- In a large skillet over medium heat, add 1 tablespoon of olive oil.
- Place the seasoned chicken in the skillet and cook for 5-6 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add 2 tablespoons of butter along with minced onion and asparagus.
- Sauté for about 2-3 minutes or until the asparagus is just tender.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in heavy cream and lemon juice; stir well to combine all ingredients.
- Return the cooked chicken to the pan; allow it to simmer for 3-4 minutes until the sauce thickens.
- If needed, adjust seasoning with additional salt or pepper. If the sauce is too thick, add 1/4 cup of water or chicken broth to reach desired consistency.
