Ingredients

  • 4 medium chicken breasts (boneless, skinless)
  • 1 tablespoon Italian seasoning
  • 1/2 tsp EACH crushed red pepper, salt, pepper
  • 1 tablespoon olive oil
  • 1 pound asparagus (trimmed and cut in 3rds)
  • 1/2 cup onion (minced)
  • 34 cloves garlic (minced)
  • 2 tablespoons butter (divided)
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Season the chicken breasts with Italian seasoning, crushed red pepper, salt, and pepper.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil.
  3. Place the seasoned chicken in the skillet and cook for 5-6 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add 2 tablespoons of butter along with minced onion and asparagus.
  5. Sauté for about 2-3 minutes or until the asparagus is just tender.
  6. Add minced garlic and cook for an additional minute until fragrant.
  7. Pour in heavy cream and lemon juice; stir well to combine all ingredients.
  8. Return the cooked chicken to the pan; allow it to simmer for 3-4 minutes until the sauce thickens.
  9. If needed, adjust seasoning with additional salt or pepper. If the sauce is too thick, add 1/4 cup of water or chicken broth to reach desired consistency.
