- 12 ounces linguine or fettuccine
- 1 pound cooked lobster meat (or 2 live lobsters)
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 small shallot, finely chopped
- 2 garlic cloves, minced
- 1/2 cup white grape juice
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh herbs: thyme, tarragon, parsley
- Lemon zest and juice

- If using live lobsters, boil them in salted water until bright red (8-10 minutes). Cool and extract the meat. If using cooked lobster, chop and set aside.
- Cook linguine or fettuccine in salted water according to package instructions until al dente; reserve 1 cup of pasta water before draining.
- In a skillet, heat olive oil and 2 tablespoons butter over medium heat. Add shallots and cook until soft. Stir in garlic until fragrant.
- Pour in white grape juice, simmer for one minute, then add heavy cream and stir well.
- Gradually mix in Parmesan cheese until melted; add thyme, tarragon, salt, and pepper.
