  • 3 cups cherry tomatoes
  • 8 slices turkey slices
  • 1/2 cup ricotta cheese
  • 1 pound pasta (long or short cut)
  • 2 tablespoons salted butter
  • Fresh herbs (thyme and basil)
  • Gouda cheese
  • Parmesan cheese
  • 1 tablespoon extra virgin olive oil
  • 610 cloves garlic, smashed
  • 2 tablespoons chopped fresh rosemary
  • Crushed red pepper flakes
  • Kosher salt and black pepper

Instructions

  1. Preheat oven to 425°F.
  2. On a baking sheet, toss cherry tomatoes with olive oil, garlic, thyme, rosemary, crushed red pepper flakes, salt, and black pepper. Arrange turkey slices on top and roast for 15-20 minutes until crisp.
  3. In a food processor, blend roasted tomatoes and garlic with ricotta until smooth.
  4. Cook pasta in salted water according to package instructions; reserve 1 cup of pasta cooking water before draining.
  5. In the same pot, melt butter with remaining thyme. Stir in tomato puree and pasta water until combined.
  6. Add cooked pasta and remaining roasted tomatoes to the sauce; toss gently.
  7. Serve topped with crispy turkey slices and fresh basil.
