Ingredients
- 3 cups cherry tomatoes
- 8 slices turkey slices
- 1/2 cup ricotta cheese
- 1 pound pasta (long or short cut)
- 2 tablespoons salted butter
- Fresh herbs (thyme and basil)
- Gouda cheese
- Parmesan cheese
- 1 tablespoon extra virgin olive oil
- 6–10 cloves garlic, smashed
- 2 tablespoons chopped fresh rosemary
- Crushed red pepper flakes
- Kosher salt and black pepper
Instructions
- Preheat oven to 425°F.
- On a baking sheet, toss cherry tomatoes with olive oil, garlic, thyme, rosemary, crushed red pepper flakes, salt, and black pepper. Arrange turkey slices on top and roast for 15-20 minutes until crisp.
- In a food processor, blend roasted tomatoes and garlic with ricotta until smooth.
- Cook pasta in salted water according to package instructions; reserve 1 cup of pasta cooking water before draining.
- In the same pot, melt butter with remaining thyme. Stir in tomato puree and pasta water until combined.
- Add cooked pasta and remaining roasted tomatoes to the sauce; toss gently.
