  • 1 lb ground beef
  • 2 green onions (minced)
  • 2 garlic cloves (minced)
  • 1 inch fresh ginger (grated)
  • 1 tbsp tamari sauce
  • 1/2 tsp sea salt
  • 1 tbsp sesame oil
  • 1 cup chopped cabbage
  • 1/4 cup grated carrot
  • 2 oz mushrooms (minced)
  • 12 rice paper (22 cm)
  • Avocado oil (for frying)
  • 2 tbsp tamari sauce (for dipping sauce)
  • 2 tbsp rice vinegar
  • 2 tbsp water
  • 1 tsp honey
  • 1/4 tsp toasted sesame seeds
  • 1/4 tsp gochugaru (optional)

Instructions

  1. Prepare the dipping sauce by mixing all sauce ingredients in a small bowl.
  2. In a mixing bowl, combine ground beef, green onions, minced garlic, grated ginger, tamari sauce, and sea salt; mix gently.
  3. Sauté chopped cabbage, grated carrot, and minced mushrooms in sesame oil until softened.
  4. Add the beef mixture to the skillet and cook until mostly browned; remove from heat.
  5. Soak rice paper in cold water until soft (about 30 seconds). Place on a moist cutting board.
  6. Add about 1/4 cup of filling to the center of the rice paper. Fold up the bottom half, tuck in sides, and roll tightly.
  7. Heat avocado oil in a skillet over medium-high heat. Fry dumplings for about 3 minutes per side until golden brown.
  8. Serve warm with prepared dipping sauce.
