Ingredients
- 3 cups Medjool dates, pitted and chopped
- 1½ cups water
- ¼ cup sugar
- 2 tablespoons lemon juice
- 1¾ cup all-purpose flour
- 1½ cup quick-cooking oats
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 400 F (205 C) and line a 9 x 13 aluminum pan with parchment paper.
- In a saucepan, combine dates, water, sugar, and lemon juice. Cook over medium-low heat for about 10 minutes until chunky.
- In a food processor, blend flour, oats, sugars, baking soda, cinnamon, and salt. Add cold butter cubes and pulse until crumbly.
- Press half of the crumble mixture into the pan, layer with the cooled date filling, and top with remaining crumble.
- Bake for 20 – 25 minutes until golden brown; cool before slicing.
