  • 3 cups Medjool dates, pitted and chopped
  • 1½ cups water
  • ¼ cup sugar
  • 2 tablespoons lemon juice
  • 1¾ cup all-purpose flour
  • 1½ cup quick-cooking oats
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 400 F (205 C) and line a 9 x 13 aluminum pan with parchment paper.
  2. In a saucepan, combine dates, water, sugar, and lemon juice. Cook over medium-low heat for about 10 minutes until chunky.
  3. In a food processor, blend flour, oats, sugars, baking soda, cinnamon, and salt. Add cold butter cubes and pulse until crumbly.
  4. Press half of the crumble mixture into the pan, layer with the cooled date filling, and top with remaining crumble.
  5. Bake for 20 – 25 minutes until golden brown; cool before slicing.
