- 1/2 cup Unsweetened cocoa powder
- 1 tsp Baking soda
- 1 tsp Salt
- 1 cup Unsalted butter (melted and cooled)
- 1 cup Brown sugar (packed light or dark)
- 1/2 cup White granulated sugar
- 1 tsp Pure vanilla extract
- 2 Large eggs (room temperature)
- 3/4 cup Oreo pieces
- 1 1/4 cup Unsalted butter (room temperature)
- 1 3/4 cup Powdered sugar (sifted)
- 1/4 cup Unsweetened cocoa powder (sifted)
- 1/4 tsp Salt
- Oreo crumbs (for decoration)
- Pectin-based gummy candies
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine all-purpose flour, cocoa powder, baking soda, and salt. Whisk together until well blended and set aside.
- In another bowl, use an electric mixer to cream together melted butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until combined.
- Gradually add the dry ingredient mixture into the wet mixture. Mix until just combined. Fold in Oreo pieces gently.
- Using a cookie scoop, drop rounded tablespoons of dough onto a prepared baking sheet lined with parchment paper.
- Bake in your preheated oven for about 12-13 minutes or until edges are set but centers are still soft.
- Remove from the oven and allow cookies to cool on the baking sheet for about five minutes before transferring them to wire racks to cool completely.
- While cooling, prepare the frosting by mixing room temperature butter until creamy. Gradually add powdered sugar and sifted cocoa powder while mixing. Add vanilla extract and salt; mix until fluffy.
- Once cooled, spread frosting generously on each cookie. Top with extra Oreo crumbs and place colorful pectin-based gummy candies on top for added flair!
