Ingredients

Scale
  • 2 1/4 cups All-purpose flour
  • 1/2 cup Unsweetened cocoa powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs (room temperature)
  • 3/4 cup Oreo pieces
  • 1 1/4 cup Unsalted butter (room temperature)
  • 1 3/4 cup Powdered sugar (sifted)
  • 1/4 cup Unsweetened cocoa powder (sifted)
  • 1/4 tsp Salt
  • Oreo crumbs (for decoration)
  • Pectin-based gummy candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine all-purpose flour, cocoa powder, baking soda, and salt. Whisk together until well blended and set aside.
  3. In another bowl, use an electric mixer to cream together melted butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until combined.
  5. Gradually add the dry ingredient mixture into the wet mixture. Mix until just combined. Fold in Oreo pieces gently.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto a prepared baking sheet lined with parchment paper.
  7. Bake in your preheated oven for about 12-13 minutes or until edges are set but centers are still soft.
  8. Remove from the oven and allow cookies to cool on the baking sheet for about five minutes before transferring them to wire racks to cool completely.
  9. While cooling, prepare the frosting by mixing room temperature butter until creamy. Gradually add powdered sugar and sifted cocoa powder while mixing. Add vanilla extract and salt; mix until fluffy.
  10. Once cooled, spread frosting generously on each cookie. Top with extra Oreo crumbs and place colorful pectin-based gummy candies on top for added flair!
