- 4 large bell peppers
- 1 cup uncooked rice
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 15.5 ounces diced tomatoes, drained
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise; remove seeds and rinse.
- In a medium saucepan, bring broth to a boil; add rice, reduce heat, cover, and simmer for 15 minutes.
- In a large skillet, heat olive oil over medium heat; sauté onion until softened. Add garlic and cook for another minute.
- Stir in ground beef; cook until browned and drain excess fat.
- Add diced tomatoes, cooked rice, Italian seasoning, salt, and pepper to the meat mixture; heat through.
- Stuff each pepper half with the filling and place them in a baking dish.
- Cover with foil and bake for 30 minutes; uncover and sprinkle with mozzarella and Parmesan cheese.
- Bake uncovered for an additional 15 minutes until cheese is melted.
