Ingredients

  • 2 bunches dark leafy kale (thinly sliced)
  • 1 teaspoon olive oil
  • kosher salt
  • black pepper
  • 1/2 cup pistachios or pumpkin seeds
  • 1/2 cup golden raisins
  • 1/2 cup shredded parmesan cheese
  • Zest of 1 lemon (about 1 tablespoon)
  • 2 tablespoons fresh lemon juice (about the juice of 2 lemons)
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 12 tablespoons maple syrup or honey (to taste)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Add sliced kale to a mixing bowl, drizzle with olive oil, sprinkle with salt and pepper, then massage the kale for about 1 minute until softened.
  2. Toss in pistachios or pumpkin seeds, golden raisins, grated parmesan cheese, and lemon zest; mix well.
  3. In a mason jar or small bowl, combine lemon juice, apple cider vinegar, olive oil, maple syrup or honey (to taste), salt, and pepper. Shake well or whisk until emulsified.
  4. Pour dressing over the salad and toss until coated evenly.
