Ingredients
- 2 bunches dark leafy kale (thinly sliced)
- 1 teaspoon olive oil

- black pepper
- 1/2 cup pistachios or pumpkin seeds
- 1/2 cup golden raisins
- 1/2 cup shredded parmesan cheese
- Zest of 1 lemon (about 1 tablespoon)
- 2 tablespoons fresh lemon juice (about the juice of 2 lemons)
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 1–2 tablespoons maple syrup or honey (to taste)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Add sliced kale to a mixing bowl, drizzle with olive oil, sprinkle with salt and pepper, then massage the kale for about 1 minute until softened.
- Toss in pistachios or pumpkin seeds, golden raisins, grated parmesan cheese, and lemon zest; mix well.
- In a mason jar or small bowl, combine lemon juice, apple cider vinegar, olive oil, maple syrup or honey (to taste), salt, and pepper. Shake well or whisk until emulsified.
