- 1 cup pineapple (diced ¼ inch pieces—canned or fresh)
- Lime zest (from 1-2 limes)
- Lime juice (from 1-2 limes)
- ½ cup cilantro (chopped)
Instructions
- Start by melting the butter in your Instant Pot or large pot over medium heat. Add the diced onion and minced garlic to sauté until they become translucent and fragrant—about 3-5 minutes.
- Stir in the long-grain white rice. Cook for an additional 2-3 minutes until the rice is lightly toasted, stirring frequently to prevent sticking.
- Pour in the pineapple juice along with enough water to reach a total of about 3 to 3.5 cups of liquid. Add kosher salt. Stir gently to combine all ingredients.
- If using an Instant Pot, seal the lid and set it to cook on high pressure for about 10 minutes. If using a stovetop method, bring to a boil, cover, reduce heat to low, and simmer for about 18-20 minutes until all liquid is absorbed.
- Once cooked, remove from heat. Let it sit covered for another five minutes before fluffing with a fork. Gently fold in the diced pineapple, lime zest, lime juice, and chopped cilantro before serving warm.
