Instructions
- Heat oil in a nonstick pot over medium-high heat.
- Sauté minced garlic and chopped jalapeno until fragrant, about 1 minute.
- Add crushed pineapple, salt, pepper, lemon juice, uncooked rice, water, and pineapple juice. Mix well.
- Cover and reduce heat to medium; cook for about 15 minutes or until rice is tender and water is absorbed.
- Remove from heat; let rest covered for 10 minutes before fluffing with a fork.
- Garnish with fresh cilantro before serving.
