Description

Ingredients

  • 2 tbsp oil (or unsalted butter)
  • 1 tsp garlic (finely minced)
  • 1 jalapeno (finely chopped)
  • 1 cup crushed pineapple
  • 1 cup uncooked basmati or jasmine rice
  • 1.5 cups water
  • 1/3 cup pineapple juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a nonstick pot over medium-high heat.
  2. Sauté minced garlic and chopped jalapeno until fragrant, about 1 minute.
  3. Add crushed pineapple, salt, pepper, lemon juice, uncooked rice, water, and pineapple juice. Mix well.
  4. Cover and reduce heat to medium; cook for about 15 minutes or until rice is tender and water is absorbed.
  5. Remove from heat; let rest covered for 10 minutes before fluffing with a fork.
  6. Garnish with fresh cilantro before serving.
