  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) condensed French onion soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) chicken broth
  • 1 packet (1 oz) dry onion soup mix
  • 2 tablespoons unsalted butter, melted
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine uncooked rice, condensed French onion soup, cream of mushroom soup, and chicken broth. Mix well.
  3. Pour half of the mixture into a greased 9×13 inch baking dish. Season the chicken breasts with salt and pepper and place them on top of the rice mixture.
  4. Pour the remaining mixture over the chicken and sprinkle with dry onion soup mix.
  5. Cover with aluminum foil and bake for 1 hour.
  6. Remove foil, add mozzarella and cheddar cheese on top, then bake uncovered for an additional 10-15 minutes until bubbly and golden brown.
  7. Allow to cool slightly before serving.
