- 4 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 can (10.5 oz) condensed French onion soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (14.5 oz) chicken broth
- 1 packet (1 oz) dry onion soup mix
- 2 tablespoons unsalted butter, melted
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine uncooked rice, condensed French onion soup, cream of mushroom soup, and chicken broth. Mix well.
- Pour half of the mixture into a greased 9×13 inch baking dish. Season the chicken breasts with salt and pepper and place them on top of the rice mixture.
- Pour the remaining mixture over the chicken and sprinkle with dry onion soup mix.
- Cover with aluminum foil and bake for 1 hour.
- Remove foil, add mozzarella and cheddar cheese on top, then bake uncovered for an additional 10-15 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
