  • 3 tablespoons butter
  • 3 tablespoons extra virgin olive oil
  • 3 pounds sweet onions, sliced
  • 1 tablespoon fresh garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dry tarragon
  • 1 teaspoon dry thyme
  • 1/3 cup apple juice
  • 8 ounces button mushrooms, sliced
  • 1 ½ cups white uncooked rice
  • 2 cups baby spinach
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 4 ounces Gruyère Swiss cheese, shredded

Instructions

  1. In a nonstick skillet over medium-low heat, melt butter and olive oil. Add sliced onions and cook until caramelized (about 25 minutes), stirring occasionally. Add garlic and seasonings; cook for another minute.
  2. In a saucepan, brown mushrooms without oil. Add remaining butter and oil; stir in rice and cook for five minutes. Add spinach until wilted, then pour in chicken stock and simmer covered for 15 minutes.
  3. Combine rice mixture with cream and cooked chicken in a casserole dish. Top with caramelized onions and cheese; broil until bubbly and golden.
  4. Serve immediately for maximum flavor.
