  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g granulated sugar
  • 90 g raw sugar
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) with fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth. Mix in vanilla.
  3. In a separate bowl, whisk eggs with both sugars on high speed until thick and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt in another bowl; stir in chocolate chips.
  5. Gently fold melted chocolate mixture into egg mixture, then carefully fold in dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray, spacing them evenly. Bake for 12-14 minutes until set and crackly on top.
  7. Cool for about 10 minutes before transferring to a cooling rack.
