  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 large onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1 zucchini
  • 2 cups fresh spinach
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced kalamata olives

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; brown on all sides (5-6 minutes) and set aside.
  3. In the same skillet, sauté chopped onion for 2-3 minutes until soft. Add minced garlic, diced red bell pepper, and zucchini; cook for another 3-4 minutes until softened.
  4. Stir in fresh spinach until wilted. Then add dried oregano, thyme, and optional red pepper flakes.
  5. Mix in orzo pasta, chicken broth, and lemon juice.
  6. Return browned chicken to the skillet and combine evenly.
  7. Cover with a lid or foil and bake for 25-30 minutes until orzo is cooked through.
  8. Uncover and top with feta cheese, parsley, and olives; bake uncovered for an additional 5 minutes.
  9. Let rest before serving warm.
