Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 small zucchini
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop sweet potatoes into bite-sized pieces. Place them in a large baking dish.
- Toss sweet potatoes with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper until well coated. Bake for about 30 minutes until tender.
- While the sweet potatoes are baking, heat a skillet over medium heat with 1 tbsp olive oil. Brown the ground turkey, seasoning with remaining garlic powder, rosemary, salt, and pepper.
- Chop zucchini into small pieces and combine with cooked turkey in the baking dish after removing sweet potatoes from the oven.
- Mix everything together, then return to the oven for an additional 10 minutes.
- Drizzle with remaining olive oil, top with parmesan cheese, and bake for another 10 minutes until cheese is melted and golden.
