Ground Turkey Sweet Potato Bake is a wholesome and satisfying casserole that combines lean ground turkey with the natural sweetness of sweet potatoes and fresh zucchini.   • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into bite-sized pieces. Place them in a large baking dish.
  3. Toss sweet potatoes with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper until well coated. Bake for about 30 minutes until tender.
  4. While the sweet potatoes are baking, heat a skillet over medium heat with 1 tbsp olive oil. Brown the ground turkey, seasoning with remaining garlic powder, rosemary, salt, and pepper.
  5. Chop zucchini into small pieces and combine with cooked turkey in the baking dish after removing sweet potatoes from the oven.
  6. Mix everything together, then return to the oven for an additional 10 minutes.
  7. Drizzle with remaining olive oil, top with parmesan cheese, and bake for another 10 minutes until cheese is melted and golden.
