Ingredients
- 2 tbsp vegetable oil
- 1 yellow onion (peeled and diced)
- 1 red bell pepper (deseeded and chopped)
- 1 green bell pepper (deseeded and chopped)
- 4 chestnut mushrooms (sliced)
- 1 cup cooked chicken chunks
- 1 can pineapple chunks in juice (400ml can, drained; reserve the juice)
- 6 cups cooked white long grain rice (cooled)
- 2 tbsp dark soy sauce
- ½ tsp garlic salt
- 2 large eggs
- juice of ½ a lemon
- 9 tbsp tomato ketchup
- 3 tbsp malt vinegar
- 5 tbsp dark brown muscovado sugar
- 3 tbsp pineapple juice (from the canned pineapple above)
- small bunch scallions (chopped)

Instructions
- In a bowl, mix together the ingredients for the sweet and sour sauce. Heat in the microwave until bubbling; set aside.
- Heat vegetable oil in a wok over medium heat. Sauté diced onion for about 5 minutes until softened. Add bell peppers and mushrooms; cook for an additional 3 minutes.
- Stir in chicken and pineapple; cook for 2–3 minutes until heated through.
- Add cooled cooked rice to the mixture, increasing heat to high. Stir well, then add dark soy sauce and garlic salt.
- Push rice to one side of the pan, crack eggs into the open space, scramble them until cooked, then mix into the rice.
- Finish with lemon juice to taste. Serve topped with scallions and lemon wedges alongside warmed sweet and sour sauce.
