  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 3 tablespoons rice vinegar
  • 2 tablespoons water
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh ginger (minced)
  • 2 1/2 pounds boneless, skinless chicken thighs
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, water, garlic, ginger, and optional red pepper flakes.
  2. Place chicken thighs in the Instant Pot. Pour some teriyaki sauce between layers and drizzle the remaining sauce over them.
  3. Seal the lid and cook on HIGH pressure for 10 minutes.
  4. Allow pressure to release naturally for 5 minutes before releasing any remaining pressure.
  5. Transfer chicken to a plate; set Instant Pot to SAUTE. Mix cornstarch with cold water until dissolved and add to bubbling sauce to thicken.
  6. Return chicken to the pot to coat with thickened sauce before serving.
