  • 10 jalapeño peppers (half seeded)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 5½ cups sugar
  • 1½ cups white vinegar
  • ½ teaspoon salt
  • 1 (3-ounce) pouch liquid pectin

Instructions

  1. Prepare your jars by washing them in hot, soapy water and keeping them warm.
  2. Simmer lids in a small saucepan and fill your water bath canner halfway with water.
  3. Chop the jalapeños and bell peppers in a food processor until finely minced. Drain excess liquid using a mesh strainer.
  4. In a large stock pot, combine the chopped peppers with sugar, vinegar, and salt. Bring to a boil over medium-high heat, stirring occasionally.
  5. Boil for 10 minutes, add pectin, boil for another minute, then remove from heat.
