  • ½ tsp baking powder
  • ¾ cup pecan halves (optional)
  • 2 tbsp confectioners' sugar
  • ⅛ tsp salt
  • ⅛ tsp ground cinnamon
  • ½ cup cold unsalted butter
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg
  • ½ cup seedless raspberry jam

Instructions

  1. In a bowl, whisk together flour, baking powder, confectioners' sugar, cinnamon, and salt. Set aside.
  2. In a stand mixer, beat cold butter and granulated sugar until fluffy. Add vanilla extract and egg; mix until combined.
  3. Gradually add the flour mixture until just combined. Divide dough into two disks, wrap in plastic wrap, and chill for at least 2 hours.
  4. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  5. Roll out one disk of dough to about ¼ inch thick. Cut shapes using cookie cutters; create cutouts for half of the cookies.
  6. Place on prepared baking sheets and chill for about 5 minutes before baking.
  7. Bake for 8 to 10 minutes until pale golden brown; transfer to wire racks to cool completely.
  8. Heat raspberry jam until slightly thickened, then spread on uncut cookies and top with cut-out cookie tops.
