- ¾ cup pecan halves (optional)
- 2 tbsp confectioners' sugar
- ⅛ tsp salt
- ⅛ tsp ground cinnamon
- ½ cup cold unsalted butter
- ¼ cup granulated sugar
- 1 tsp pure vanilla extract
- 1 large egg
- ½ cup seedless raspberry jam
Instructions
- In a bowl, whisk together flour, baking powder, confectioners' sugar, cinnamon, and salt. Set aside.
- In a stand mixer, beat cold butter and granulated sugar until fluffy. Add vanilla extract and egg; mix until combined.
- Gradually add the flour mixture until just combined. Divide dough into two disks, wrap in plastic wrap, and chill for at least 2 hours.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Roll out one disk of dough to about ¼ inch thick. Cut shapes using cookie cutters; create cutouts for half of the cookies.
- Place on prepared baking sheets and chill for about 5 minutes before baking.
- Bake for 8 to 10 minutes until pale golden brown; transfer to wire racks to cool completely.
- Heat raspberry jam until slightly thickened, then spread on uncut cookies and top with cut-out cookie tops.
