  • 3/4 cup unsalted butter, room temp
  • 23 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 12 tbsp milk (for frosting)
  • Lucky Charms cereal (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, cornstarch, baking soda, and salt. Whisk these ingredients together until well mixed.
  3. In another bowl, beat together unsalted butter and granulated sugar using an electric mixer until light and fluffy. Add in vegetable oil and mix until combined.
  4. Mix in the large egg, egg yolk, and vanilla extract until well blended.
  5. Gradually add the dry mixture into the wet ingredients. Mix until just combined; do not overmix.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets about 2 inches apart.
  7. Bake in preheated oven for about 10-12 minutes or until edges are lightly golden. Remove from oven and let cool on sheets for a few minutes before transferring to wire racks to cool completely.
  8. While cookies are cooling, beat unsalted butter for frosting until creamy, gradually add powdered sugar while mixing. Pour in vanilla extract and milk as needed to reach desired consistency.
