  • 1 can (15 ounces) garbanzo beans, rinsed and drained
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1/4 cup red onion, chopped
  • 3/4 cup celery, chopped
  • 1 small cucumber, peeled, seeded, and chopped
  • 3/4 cup fresh Italian parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tomatoes, chopped
  • 1/4 cup extra-virgin olive oil
  • juice of 1.5 lemons
  • 1 clove garlic, minced
  • Italian seasoning, salt & pepper to taste

Instructions

  1. In a large mixing bowl, combine the garbanzo beans, cannellini beans, kidney beans, red onion, celery, cucumber, parsley, basil, and tomatoes.
  2. In a separate small bowl or mason jar, whisk together the olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper.
  3. Drizzle the dressing over the bean mixture and toss gently until everything is well coated.
  4. Chill in the refrigerator for at least 45 minutes before serving to allow flavors to meld.
