  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl and pour in the Rice Krispies Cereal.
  2. In a medium-large saucepan over low heat, melt the butter. Add the vegan marshmallows and stir until mostly melted.
  3. Remove from heat; stir in peppermint extract and food coloring. Pour the mixture over the cereal and toss well.
  4. Let cool slightly, then fold in most of the mini chocolate chips. Spread into a greased 8-inch pan and top with reserved chocolate chips.
  5. Allow to cool at room temperature for about 30 minutes before cutting into squares.
