Ingredients

  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 1/2 teaspoon peppermint extract
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 2 drops green food coloring (optional)
  • 226 grams dark chocolate (chopped)
  • 120 grams heavy cream
  • 1 teaspoon peppermint extract

Instructions

  1. Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
  2. In a mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and increase speed to high until stiff peaks develop. Mix in peppermint extract and green food coloring if desired.
  3. Sift almond flour and powdered sugar together. Gently fold into the meringue until smooth.
  4. Transfer the batter to a piping bag and pipe small circles onto prepared baking sheets.
  5. Let macarons rest for about 30 minutes until they form a skin, then bake for about 15 minutes or until they lift easily from parchment.
  6. For the ganache, heat cream until boiling, pour over chopped chocolate, let sit for a minute, then stir in peppermint extract.
  7. Once macaron shells are cool, pair them up, pipe ganache on one shell, and gently press another on top.
