  • 8 ounces protein pasta
  • 4 cloves garlic (minced)
  • 5 cups spinach
  • 3 tablespoons unsalted butter
  • 1 teaspoon red pepper flakes
  • 2 tablespoons apple juice vinegar
  • Kosher salt and freshly ground black pepper (to taste)
  • Finely grated cheese (optional)

Instructions

  2. Cook the pasta in salted boiling water until al dente; reserve 1/2 cup pasta water before draining.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat, then sauté the mushrooms for 6-8 minutes until golden brown.
  4. Add minced garlic, spinach, red pepper flakes, salt, and pepper to the skillet; cook until spinach is wilted.
  5. Combine cooked pasta with the mushroom mixture, adding reserved pasta water and remaining butter as needed.
  6. Serve warm, garnished with cheese if desired.
